1 bag mixed salad greens
3 ounces crumbled feta cheese
1/2 cup fresh strawberries cut up into small chunks
1 large avocado cut up into sliced chunks or just spooned into pieces
2 tbsp mixed nuts or what you have available.
Vinaigrette
4 strawberries
1/4 cup apple cider vinegar
2 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1 tsp allulose or sugar substitute
How to make this Keto strawberry salad
For the vinaigrette
In a mixer add the cider vinegar, olive oil, salt, pepper and strawberries.
Blend the mixture into a creamy base or if you prefer more chunky and hearty, just use a pulse function.
How to assemble the salad
wash the strawberries and cut into large slices and reserve
cut the avocado in half and make slices in each side and scoop up the slices and reserve it
In a large shallow bowl add the salad and avocado, strawberries and feta cheese
Add the mixed nuts into the mixture and mix
Add the dressing right before serving the salad.

This looks wonderful with the Strawberry vinaigrette! I will try it. Also I like adding sun flower seeds and pumpkin seeds to salads.
