This low carb chicken and mushroom soup is so delicious; after having a fantastic meal of the creamy chicken parmesan and mushroom the other day, I decided to try and convert the remainder into a yummy soup which is easy and fantastic, but I’ll list all the main ingredients and directions like you are making it from scratch below.

Low carb chicken and mushroom soup recipe
There are so many different variations of this soup and you definitely make a lot of substitutions depending on what you have available in your cupboard. The only thing really missing from my original version of this soup is rice or pasta. But what I have added in place is more vegetables to make the meal even more satisfyig and healthy at the same time.
Ingredients and substitutions
4 chicken breasts cut up into small cubes, you can use dark meat or whatever you have available in your kitchen to use.
One cup of mushrooms, I love the combination of trumpet and shitake mushrooms. You can also used canned or whatever you have available at home.
One package of spinach in a bag defrosted
One cup of Heavy Cream or half and half
Two cups of chicken stock
Two stalks of celery sliced
Two tablespoon of garlic – more to taste if you love garlic
Salt and pepper to taste.
How to make this Low carb chicken and mushroom soup
Once you have all the ingredients prepped, cooking takes little time and effort, here are the directions below
Add some olive oil to the pot and place in the chicken and cook until golden. Place the in chicken on a plate and reserve
Add a little more oil and put in the garlic and once you get those amazing garlic smells add the two different mushrooms and mix them in well
Add your peppers, spinach and celery to the mix and stir in with the mushrooms and then mix in the cream and parmesan cheese.
At this point you can place the cooked chicken back into the pot and then add the stock mixture for creating the soup base.
Add salt and pepper to taste and place to simmer for the soup mixture to set.
