Ingredients for this quinoa apple salad recipe
1 cup of quinoa ready to cook
2 small gala apples diced into 1/4 inch cubes
1/2 cup dice carrots into 1/4 inch cubes or substitute celery if you don’t want to use carrots
1/4 cup diced almonds
1 1/2 cups of chicken or vegetable broth
Maple Dijon Vinaigrette
3 tablespoons virgin olive oil
1 teaspoon no sugar maple syrup
1 tablespoon Dijon mustard
2 tablespoon apple cider vinegar
2 cloves minced garlic
1 teaspoon turmeric
1 tablespoon minced ginger
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Make this quinoa apple salad
Cut up your apples and carrots and place into a medium bowl and set aside
In a pot, add the vegetable broth and quinoa to a boil and then remove from heat and let stand for about 20 minutes to cool off
In a separate bowl combine the olive oil, maple syrup, Dijon mustard, apple cider vinegar and the rest of the spices and mix well
Mix the quinoa into the wet ingredients and mix well, adjust flavors to taste
Fold in your almonds into the wet ingredients and mix well again
Add your apples, celery and nuts to the mixture
Chill the dish to let the flavors marinate and plate the dish to serve
