Ingredients

3 6-ounce salmon fillets, skin on

4 tablespoons prepared pesto

2 tablespoons shredded Parmesan cheese

1 tablespoon apple cider vinegar

1 tablespoon of ginger minced

2 tablespoon butter

3 cloves garlic minced

1/2 cup broccoli florets

1/2 cup small portobello mushrooms

2 tablespoons of olive oil

1/2 teaspoon sea salt

1/2 teaspoon black pepper

Add a dry rub of the salt and pepper to the fish and let rest

In a large skillet add the olive oil and fry the fish on each side for about three minutes and flip the fish to finish and place in a plate while you use the same skillet to prepare the rest of the dish

Add the butter and garlic and wait for it to get aromatic

Then add the broccoli and mushrooms and mix well and then add the ginger and apple cider vinegar

Eventually add the pesto and mix well

Re-introduce the salmon to the mixture and cover the skillet for a few more minutes

Spoon the fish and add the pesto sauce from the pan and add the veggies to the sides and serve immediately.
