Hey everyone,
Just recently back from a nine month around the world travel adventure, photographer, writer and blogger, my name is Noel Morata I returned to find out I had developed multiple health issues with my blood work to include a pre-diabetes diagnosis, foot issues with plantar fasciitis on both feet and deteriorating arthritis to both hands, wrists and joints.
Determined not to take medications and address the root cause my conditions, I’m striving to find a better balance and change direction. Starting with making changes to my diet and committed to healthier food, deeper sleep and moving away from bad habits, I’m learning that you can make a lot of these changes slowly and have a direct impact to a normal lifestyle that keeps your health conditions in check with self-monitoring as a way to control this outcome in a natural and none-medicated assistance.
It’s a constant battle and I realize that you can only take measured steps some going faster and others taking their time. You definitely need to keep in mind what is good for yourself and condition and talk with your medical providers about what steps are necessary to make and do successfully with your present situation. Staying positive, healthy and taking easy steps will help you to reach your goal to being normal and living a healthy balanced life.

Some FAQs on the website
What’s the carb count on all of these recipes?
The nutrition information of each recipe is calculated for you in the recipe card. Pllease note that it’s an automatic calculation and not done by hand or guaranteed to be accurate. Your nutritional information will vary based on the exact products you use and I strive to use the freshest and nutritious raw ingredients to cook from scratch when I can.
Can I swap out this ingredient for that ingredient?
Yes, I tend to do this all the time especially when I have things that might start to turn over too quckly in the fridge. In cooking, swaps are fun to make and they often work out just fine based on what you have to use now as a substitute so go for it.
When it comes to baking, its a little trickier unless you have been baking for awhile. While I don’t profess to be a baker, I do make very simple baked dishes and bread recipes on occasion.
Can I freeze these recipes?
In general, the answer is ‘probably!’ I admittedly don’t have a lot of experience with freezing foods since I’m always testing new recipes and bad at labeling my food items to be frozen. I also tend to make smaller batches so those store really well in the fridge compartment. Chances are that many of the dishes will freeze well especially the casserole dishes, soups, cookies and dishes that are not yet cooked but can easily be frozen and then defrosted prior to cooking.
How can I make this recipe lighter with lower carb, gluten free, or lower sodium ingredients?
I’m sure there is a way, to try and use the taste test to subtract for sodium, but unfortunately I’ve only tested the recipes as written. You’ll have to experiment for gluten free versions, but most of the recipes I make are already lower carb, keto friendly or paleo so the healthy option is mostly covered. With each recipe I create, you have the option of substitutions and use ingredients you have on hand that works best for you.
