Fast avocado and eggs keto recipe
There are times I’m so hungry and need something to make really fast with ingredients that are already to use. I typically have fresh avocados in the fridge along with hard boiled eggs saved up for a variety of recipes. This keto eggs and avocado recipe hit all those buttons with something i can make up quickly and is so satisfying to eat on its own or with some sides. I actually get fresh avocados from a friend who grows these buttery avocados and there’s nothing like having them freshly pulled from the tree and ready to eat.

2 large eggs scrambled
1 large avocado cut into small size cubes
1/4 cup mixed mushrooms or whatever you have in stock
2 tbsp canola oil
1 tsp tumeric
2 tbsp mixed cheese or whatever you have available
1/4 tsp salt
1/4 tsp pepper
2 cloves garlic cut into small minced pieces
Make this keto avocado and egg dish
In a medium size skillet add your canola oil and then mix the garlic to get aromas active
Add you mushrooms and then the scrambled eggs and mix together.
Add your cheese and then the avocado pieces along with tumeric
Last add your salt and pepper to taste, cover lid and turn off heat and let it finish cooking
Plate the dish and add your sides to the dish.
