Delicious fall chickpea and apple salad with semi ripe papaya
I love this combination of sweet and savory type of salad with the chickpea and the sweetness of the green apples and semi ripe papaya which adds another element of sweetness to this salad. When you add other beneficial ingredients like garlic, turmeric, Chile powder and red pepper flakes and ginger to the mix, you get a burst of flavors all in this dish.
Although I’m able to get semi ripe papayas in my area, you can easily swap it out with any available vegetable that would work for you like avocado, bell peppers, zucchini or some squash vegetable. This will still add up to a zesty and sweet combination of flavors that you’ll want to make again and again.

Ingredients to use for your chickpea, apple and papaya salad
Chickpea – I use canned version in the typical 15 ounce can
One large apple – my go to for this is granny smith or pink lady diced into small pieces
1/4 cup of cranberry
one medium semi ripe papaya that is still more in a vegetable state
4 stalks of celery cut into small pieces
1/4 cup pumpkin seeds
Dressing
2 tablespoon Apple vinegar wine
3 cloves garlic minced
1 tablespoon ginger minced, you can use fresh or already minced version
1/4 teaspoon red pepper flakes
1/4 teaspoon Chile powder
1 teaspoon maple syrup
1/2 teaspoon sea salt
How to make this Chickpea, apple and papaya salad
In a medium bowl add all the dressing ingredients and mix well.
Taste and adjust flavors to your preference
In the same bowl add your chickpeas first and mix
Dice the apple into small bites and add along with the cranberries
Add the papaya cut into small pieces
Last add the pumpkin seeds and mix well
Place in fridge and chill for a few hours
Place into individual plates and serve
Substitutions
If you cannot find semi ripe papayas feel free to substitute with any squash, avocado or bell pepper
You can substitute pumpkin with any nuts you have available like pecan, almond or walnuts
If you want more mild flavors omit the chile powder and pepper flakes
