Ingredients
  

  • 1/2 cup Almond flour
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 4 tsp Allulose or alternate sugar sweetner
  • 1/2 cup mixed berry fruits
  • 2 tsp Butter
  • 1 tsp Baking powder
  • 1 tsp Cinnamon

Instructions
 

  • Heat up your convection oven or toaster oven since this smallish cake only requires a small oven. Heat your oven to 390 degrees
  • In a medium bowl heat your butter about 30 seconds and then add the egg and vanilla extract and mix
  • Add all your dry ingredients one at a time: Cinnamon, baking powder and sweetener and mix very well
  • Eventually add the almond flour to the mix and then mix everything together thoroughly
  • Fold in the mixed berry fruits and then use a spatula to pour and scrape to a baking pan
  • Make sure you put some spray or oil in the baking pan so the cake does not stick to the bottom or sides of the pan.
  • When the pre-heat on the oven sounds off then place the pan into the oven and cook for approximately 15 minutes.
  • When you hear the bell sounding, check your cake with a toothpick to see if it is cooked or doughy and if so add a few more minutes baking time and let the pan cool off in the oven.
