Apple sausage casserole
This is one of my favorite breakfast dishes that adds the crunchy and flavor of apples with low carb sausages that makes this so warm and inviting as a first morning meal. The eggs and cheese add just enough of a compliment to the dish to make the casserole so delicious and yet nutritious. We have added even more healthy ingredients to make this low carb and packed with flavors

- 2 medium apples (I used pink lady) peeled and diced into small cubes
- 1 pound turkey sausage
- 3 slices seeded low carb bread (I use Daves bread)
- 1/2 cup onion sliced thin
- 1/3 cup shredded cheese (use any you would like)
- 2 tbsp Dijon mustard
- 6 large eggs
- 1 tsp rosemary minced
- 2 tbsp garlic minced
- 1/2 tsp sea salt
- 1/2 tsp pepper
Put olive oil, onion and garlic into the skillet and use medium heat until aromatic
Add the apples and then the cooked sausages and then set aside from burner with lid on to keep moist
In a separate bowl combine the eggs, almond milk, Dijon mustard, minced rosemary and shredded cheese and mix together well.
In a baking dish, grease the bottom of the pan and spread all the bread pieces at the bottom.
Take the apple sausage mixture and place on top of the bread evenly
Evenly pour the egg mixture into the top of the casserole dish and sprinkle with rest of the rosemary
Bake the dish for 25-30 minutes until the dish is golden brown and let it rest for 10 minutes before serving.
