This healthy egg salad is made extra creamy from the addition of avocado and the rich protein rich chicken breast. It's such a tasty twist on the traditional egg salad and with parmesan cheese added. The avocado and egg salad can easily be eaten on its own, on a bed of salad greens or even open face on a healthy low carb slice of bread to have a healthy but tasty meal to enjoy

Ingredients
  

  • 4 large boiled eggs and diced into small pieces
  • 1 large avocado diced
  • 1/3 cup chicken cut into small slices
  • 1/2 cup lemon juice
  • 3 tbsp Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 2 tbsp parmesan cheese
  • 1/2 tsp sea salt
  • 1/2 tsp pepper

Instructions
 

In a large bowl combine yogurt, garlic, apple cider vinegar, mustard salt and pepper and mix well

    Add the diced avocado and then the eggs and mix well together

      Add the chicken pieces and stir the mixture

        Last sprinkle the parmesan cheese and mix together wel

          Serve immediately
