- 1/2 pound raw shrimp
- 1/2 cup string beans cut into bit size pieces
- 1 medium eggplant cut and diced into small sizes
- 2 tbsp minced garlic
- 2 tbsp minced ginger
- 1 tbsp turmeric
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 medium lemon
- 2/3 cup chicken broth
- 2 tbsp olive oil
PreheatIn a large pan heat olive oil on medium heat
Add garlic and ginger and wait until it gets aromatic then add the eggplant and string beans
Add the turmeric, lemon juice and dry spices, salt and pepper to taste
Add chicken broth and quinoa and mix in with veggies
Add shrimp, lemon zest and mix well and cover with lid.
Plate into dishes and serve warm the oven to 375
