- 1 lbs boneless chicken breast shredded
- 2 cloves garlic sliced thin
- 1 tbsp minced ginger
- 1 tbsp olive oil
- 1/3 cup bell pepper
- 1/3 cup chopped mushroom
- 3 stalks celery chopped up
- 1/2 cup green beans cut into bite size pieces
- 1/2 cup carrots cut into bit size pieces
- 1 small onion diced into small pieces
- 2 pieces bay leaf
- 6 cups chicken stock low sodium
- 1 tbsp turmeric
- 1/2 tsp salt
- 1/2 tsp black pepper
Cut up your cooked chicken breast into small bite size slices
If you haven't cut up your other vegetables into small bite size pieces do so now
Heat up a pot on a stove top and add the olive oil
Add your onion, ginger, turmeric and garlic to make it aromatic and then add bay leaf
Slowly add your vegetables starting with bell peppers one by one and mix well
Add your chicken stock, chicken and mushrooms and mix everything well
Finally add your diced tomatoes and then chicken and cook on low temperature.
Add your salt and pepper to taste
Turn off heat and plate each bowl and serve with toppings
