I had just a little bit of tofu that I was looking for eating at breakfast and egg scramble sounded like the perfect morning meal. This keto tofu egg scramble is fast, easy and if you have all the ingredients ready, prep time is easy and quick.

- 2 large eggs scrambled
- 1/4 cup avocado sliced and diced
- 1/4 cup firm tofu
- 2 tbsp mixed shredded cheese or use whatever you have available
- 1 tsp tumeric
- 2 cloves garlic sliced thin
- 2 tsp canola oil
- 1/4 tsp salt
- 1/4 tsp pepper
Since this is a fast saute I use canola oil and add it to the skillet
I place the garlic slices and the tofu
Add the eggs, turmeric, avocado and cheese
Add salt and pepper and place dish into a section of the skillet so you can easily flip this into a plate afterwards
