Low carb blueberry chocolate chip cookies
I’m a total chocoholic and really love these healthy low carb blueberry and chocolate chip cookies. Being diabetic, I was still craving a lot of desserts and when I learned how to make these amazing cookies, I knew I had to make them often and always have ingredients available to create these yummy but also low carb desserts that will not spike your blood sugar levels.

- 1 cup Almond flour
- 1 cup Coconut flour
- 1 cup sugar free chocolate chips
- 1/2 cup Allulose You can use any sugar free substitute
- 1 cup Blueberries
- 1 Large Egg
- 1 1/2 tsp baking powder
- 1 tsp Vanilla extract
- 1/2 cup softened butter
- 1/3 cup nuts (optional)
- 1 pinch sea salt
Turn on your oven to 350 degrees
In a medium sized bowl combine all the dry ingredients and mix well
In another bowl add the eggs, sugar sweetner, butter, vanilla and mix well
Combine the dry ingredients into the wet ingredients and mix together well
Fold in your cookies and chocolate chips
Set up a baking dish with parchment paper cover and use a spoon or ice cream scooper to scoop out a nice portion sized cookie and place in parchment and flatten them a bit.
Make sure you have a lot of space in between the cookies so they don’t run into each other.
Bake each the cookies for about 10 minutes until lightly browned and pool out of the stove and let set on the countertop
Let it cool and then dig in.
