Low carb breakfast burrito

- 3 pieces bacon
- 2 large eggs
- 1 tbsp olive oil
- 1 piece lowcarb tortillas ( I use Mission Carb Balance)
- 2 tbsp mixed cheddar cheese
- 2 pieces cut up asparagus
- 1/2 tsp salt
- 1/2 tsp pepper
In a small bowl scramble, the eggs with the salt, pepper and set aside
Heat a medium skillet and place the bacon and cook well on each side
Set aside in a plate with paper towel to absorb the oils and then break into small bite size pieces
Drain any excess oils and then add olive oil and cook the asparagus
Add the scrambled egg mixture and sprinkle the cheese on top and mix ingredients well together.
Place the scrambled egg mixture onto a plated tortilla and then sprinkle the bacon pieces on top
Roll the tortilla together and then you're ready to eat.
