There's nothing like a seared and baked pork tenderloin with roasted apples and in season veggies to create a wholesome, delicious and hearty meal. Not only is this recipe relatively easy to follow but it is healthy, low carb and packed with flavors. What you get from this seared tenderloin and then finished in the oven or air fryer is a moist and truly filling dish that's easy and delivers a hearty meal for friends or family.

Ingredients
  

  • 1 lbs. Pork tenderloin
  • 2 small apples
  • 4 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon red chili pepper flakes
  • 1 small onion
  • 6 cloves garlic
  • 1 lbs. broccoli florets
  • 1 stalks celery
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken stock

Instructions
 

Start by preheating your oven or air fryer to 400 degrees ( smaller pork loins are the perfect casserole size)

    Poke holes in the tenderloin and dress with salt pepper and minced garlic

      Place two tablespoons of the olive oil on medium heat and sear the tenderloin on all sides until browned and then set aside (about 5-6 minutes total)

        Place the remaining olive oil and saute the apples, onions, celery and broccoli and add your herbs and mix together well.

          Add the stock to the dish and simmer on low and then let it simmer and let a little of the sauce get reduced.

            Place the vegetables around the pork tenderloin in a ceramic cooking dish and then place in the oven

              Bake the dish for about 15-20 minutes and test to see if the internal temperature of the pork reaches 150 degrees Fahrenheit.

                Take out of the oven and let it rest about 10 minutes before serving
