- 1 cup quinoa ready to cook
- 2 small gala apples diced into 1/4 inch cubes
- 1/2 cup sliced carrots into small bite size pieces
- 1/4 cup diced almonds
- 1 1/2 cup vegetable or chicken stock
- 3 tbsp virgin olive oil
- 1 txp no sugar maple syrup
- 1 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 2 cloves minced garlic
- 1 tsp turmeric
- 1 tbsp minced ginger
- 1/2 tsp sea salt
- 1/2 tsp black pepper
In a pot, add the vegetable broth and quinoa to a boil and then remove from heat and let stand for about 20 minutes to cool off
In a separate bowl combine the olive oil, maple syrup, Dijon mustard, apple cider vinegar and the rest of the spices and mix well
Mix the quinoa into the wet ingredients and mix well, adjust flavors to taste
Add your apples, celery and nuts to the mixture and plate the dish to serve
