Make this easy Flaxseed biscuit recipe
I was skeptical about a bread like quality made in 60 seconds so I decided to give this a shot especially since I love easy things with minimal ingredients.
I have to say there is a lot of satisfaction in making your own bread that you can dress up or down, sweet or savory and in under a very short time while you make something else that might be a good filling for this like my keto chicken salad or my tuna egg salad recipe.
In any case it works especially if you don’t have any low card bread in your fridge to work with and this is the next best thing.

Ingredients for this Flaxseed biscuit recipe
1/4 cup flaxseed meal. If you just have flaxseed, you can use a coffee grinder or blender to grind down to a meal consistency
1/4 tsp baking powder
2 tbsp water
2 tbsp spice or any ingredient you want to mix to create your flaxseed bread. I added this umami dry herb mix into the bowl
Directions on making your flaxseed biscuit
This recipe will typically be a serving for one with a muffin type bread you can cut open and eat open face with any topping.
Combine into a medium sized bowl the flaxseed meal, dry herb or ingredients and baking powder and mix well
Add the water slowly and mix together well.
Work the mixture well so everything is incorporated well and you can take out and mold with your hands into a shallow baking dish
Spray the dish with some oil or butter and place the shaped Bisquit sized bread into the bowl.
Set the microwave to 60secs normal cooking and press enter
Check the bread to see if its solidified, add a few more seconds if it doesn’t yet look solid.
Take the dish outside of the microwave and let it cool on the counter top
Add your favorite toppings to the flaxseed Biscuit.
After the bread has cooled, cut the bread in half like an English muffin and then add your toppings to the bread. The bread does have a dense quality and It probably works well with something light as a topping like cream cheese and salmon with capers.
