1 pound cut into three nice pieces of salmon

1 cup of spinach leaves

1/4 cup of broccoli

1/2 cup of mushroom, use any that are available

1 tbsp vodka

1 lemon juiced and lemon zest

1/2 cup of almond milk

2 tbsp Greek yogurt

3 cloves garlic chopped and diced

2 tbsp olive oil

2 tbsp ginger minced

1 tbsp turmeric

2 tbsp Italian seasoning

1/4 tsp salt

1/4 tsp pepper

How to make this this salmon with mushrooms

In a medium sized bowl, add all your wet ingredients, the almond milk, Greek yogurt, vodka, garlic, ginger, Italian seasoning and turmeric and mix well

In a large skillet place your olive oil and set to medium then place your salmon fillet on the skinless side in the pan and fry until color changes and then flip to the skin side.

Take the salmon of the skillet and set aside.

Add a little more oil and then the mushrooms followed by the cut broccoli and spinach and sauté briefly.

Pour in the wet sauce ingredients and let simmer for a short time and mix ingredients together with the sauce.

Open and area in the middle and add the salmon pieces back to the skillet and spoon some of the sauce into the salmon and then cover with lid and turn off the heat.

Plate your salmon with the vegetables to the side and serve immediately.
