Low carb breakfast burrito with, bacon, eggs and asparagus

Ingredients to this low carb breakfast burrito
This is just for one serving, so if you want to make more double or add to the recipe based on how many people you want to feed.
3 slices bacon
2 large eggs
1 tbsp olive oil
1 low carb tortillas ( I use Mission Carb Balance)
2 tbsp mixed cheddar cheese
2 pieces asparagus cut in half and diced
1/2 tsp salt
1/2 tsp pepper
How to make this low carb breakfast burrito
In a small bowl scramble, the eggs with the salt, pepper and set aside
Heat a medium skillet and place the bacon and cook well on each side
Set aside in a plate with paper towel to absorb the oils and then break into small bite size pieces
Drain any excess oils and then add olive oil and cook the asparagus
Add the scrambled egg mixture and sprinkle the cheese on top and mix ingredients well together.
Place the scrambled egg mixture onto a plated tortilla and then sprinkle the bacon pieces on top
Roll the tortilla together and then you’re ready to eat.
Substitutions on this recipe
You can use any vegetable that you have in your fridge and cut into small pieces so it is easy to roll into the tortilla
You can also substitute any cheese you would like that is in your fridge
Bacon is great but if you have other meats available or just want to do this veggie style, then you can create with what you have available.
