Delicious low carb broccoli and cheese soup recipe

If you are looking for an easy and fast soup, you should consider this broccoli, chicken and cheese recipe. Very simple, fast and using healthy ingredients, you’ll be satisfied making this soup and serving it to friends and family

The recipes uses easy to find ingredients like onions, garlic, celery, broccoli, chicken and vegetable or meat broth. You can also substitute other ingredients that are fantastic to add to the soup based on what you have available. We had extra shitake mushrooms so we included that into the soup to create a meaty, chunky and cheesy dish for all to enjoy.

1 tablespoon olive oil

1 small onion diced thinly

1 tablespoon butter

2 stalks celery diced small cubes

3 cubes of minced garlic

2 cups broccoli florets

1 teaspoon paprika

1 teaspoon dried Italian herb

3 cups low sodium chicken or vegetable broth

1 cup of white shredded chicken or whatever chicken you have available that’s already cooked

2/3 cup of mushrooms diced, ( I like using the meatier shitake mushrooms)

2 cups of shredded cheese (I use shredded cheese)

Salt and Pepper to taste

1 tspn chili pepper flakes

Use a large soup pot and add your olive oil in medium heat and eventually add the butter Add the onions and sauté well and then celery mixed together.

Add the broccoli, dried herbs, chicken and then your broth. mix the ingredients together well.

Eventually add the cheese slowly into the soup and mix together well. Season with salt and pepper to taste

Ladle separately into small bowls and garnish with chili pepper flakes.

How to store your broccoli cheese soup

You can keep your soup in its cooking pot or place into a sealed container and heat up separately over the stove top or fridge.

If you want to freeze the extra soup, you can do it and I suggest using a sealable container and leave some space in between the lid so it can expand that you can have a label placed so you can easily find the dish in the freezer section. Frozen soup can easily be frozen for up to two months.

This can be a healthy serving on its own for a healthy hot meal but I do like to mix it up with an easy salad , sandwich with low carb bread or a more substantial entree. Here’s a few suggestions of what you want want to make as an accompaniment dish.
