There’s nothing like a seared and baked pork tenderloin with roasted apples and in season veggies to create a wholesome, delicious and hearty meal. Not only is this recipe relatively easy to follow but it is healthy, low carb and packed with flavors. What you get from this seared tenderloin and then finished in the oven or air fryer is a moist and truly filling dish that’s easy and delivers a hearty meal for friends or family.

For the veggies, I used granny smith apples that is slightly sour along with broccoli, celery and onions to give some sweetness. You can easily substitute whatever you also have in season veggies or what’s available in your fridge to add to this mix.

1/2 teaspoon Italian herbs

1/2 teaspoon chili flakes

1 teaspoon apple cider vinegar

6 cloves garlic

1 small onion

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup of chicken or vegetable stock
