I must confess, I’m not a great baker but going through the diabetes process is dang hard for a sweet tooth like me. So, I decided to try out this almond cake with almond flour modeled after this delicious blueberry muffin I had made earlier. It was so delicious and cake like, that I thought, I need to make a larger version and use all these healthy berry fruits that I had just defrosted from the freezer.
After I got the muffin recipe down, I decided to double the recipe and add a mixture of berries to make this even more spectacular along with some almond bits that I integrated into the mixture. It turned out pretty dang good and so light and fluffy. It really satisfies the sweet tooth without spiking those blood sugar levels to boot. Try this recipe if you are really hankering for something sweet and not to much work to put it all together.

Ingredients for this almond cake
1/2 cup almond flour
2 eggs
1 tsp vanilla extract
4 tsp allulose or sugarfree alternative
1/2 cup assorted berry fruits
2 tbsp of butter
1 tsp baking powder
1 tsp cinnamon
How to make this delicious almond cake with almond flour
Heat up your convection oven or toaster oven since this smallish cake only requires a small oven. Heat your oven to 390 degrees
In a medium bowl heat your butter about 30 seconds and then add the egg and vanilla extract and mix
Add all your dry ingredients one at a time: Cinnamon, baking powder and sweetener and mix very well
Eventually add the almond flour to the mix and then mix everything together thoroughly
Fold in the mixed berry fruits and then use a spatula to pour and scrape to a baking pan
Make sure you put some spray or oil in the baking pan so the cake does not stick to the bottom or sides of the pan.
When the pre-heat on the oven sounds off then place the pan into the oven and cook for approximately 15 minutes.
When you hear the bell sounding, check your cake with a toothpick to see if it is cooked or doughy and if so add a few more minutes baking time and let the pan cool off in the oven.
Let the cake settle and cool down on your countertop
Pull out the baking pan and let it rest for a few minutes and run a spatula around the side and flip it directly to a plat or your hands.
You can then dress the top with slivered almonds and slice away but in moderation.
