This is one of my all-time favorite dishes to make and it is so delicious and even better low carb and nutritious. Made with healthy ingredients with chicken and mushrooms for protein and spinach for your leafy greens. This makes for a complete and fantastic entree main course to eat when you are really hungry. You will love making and eating this creamy garlic and parmesan chicken and mushrooms along with any family or friends that get to eat this delicious dish.

Garlic and parmesan chicken and mushroom
I love creating this dish in a large skillet that holds all that delicious creamy sauce with the chicken and mushrooms. I typically get dried shitake mushrooms, rehydrate then and reserve the sauce for more umami style flavor to the dish.
Prepared in less than thirty minutes the garlicky and parmesan flavors mixed in with the rich creamy sauce coating the chicken and mushrooms is really to die for and you should consider doubling the dish if you want to save this for later meals.
Basic ingredients and substitutions
One pound Chicken breast cut up into small chunks. You can also substitute any chicken parts you wish
8 ounces of shitake mushrooms or any mushrooms you prefer. Cut them into smaller chunks or slices
One 1/2 cup parmesan cheese
One bag of spinach greens chopped or substitute cauliflower, broccoli or any greens you prefer
One cup of heavy cream or half and half
Two tablespoons of Olive oil
Three tablespoons of butter
1/2 cup of chicken broth
Two garlic cloves
Salt and Pepper to taste
How to make this savory garlic and parmesan mushroom chicken
Place the olive oil in the skillet and warm.
Eventually put in your chicken and brown the pieces, take out and reserve on a plate
Add your butter and melt, then add your garlic and saute until you smell the garlic flavors
Then add the mushrooms and saute for about three minutes
Pour in your cream and mix everything together
Pour in the chicken broth to add more flavor or add the mushroom from hydrating the mushrooms
Add the parmesan cheese and season with the salt and pepper
Eventually add all the chopped spinach or greens to the saute and mix
Place back the cooked chicken and coat evenly with the creamy parmesan sauce.
Finishing and plating your dish
It’s preferable to serve the dish cooked and ready and when you plate your dish think of the plating rule to add this as your protein to 1/4 of your plate, followed with your vegetables which is about 1/2 size of the plate and then a low carb grain of your choosing like barley, quinoa or brown rice.
You can eat this dish on its own or add some different sides that can make that plating ratio make sense
Other variations include:
Add some Cole slaw as a 1/4 portion side
Add a salad or vegetable greens that can take up a larger portion of the plate
Maybe add a healthy grain food like quinoa to the mix
