Ingredients for this Healthy Garlic Shrimp with Quinoa
1/2 pound raw shrimp
1 cup cooked quinoa
1/2 cup string beans cut into bit size pieces
1 medium eggplant
2 tbsp minced garlic
2 tbsp minced ginger
1 tbsp turmeric powder
1/2 teaspoon salt
1/2 tsp pepper
1/2 tsp chili powder
1 medium lemon
1/3 cup chicken broth
2 tbsp of olive oil
How to make this shrimp and quinoa dish
In a large pan heat olive oil on medium heat
Add garlic and ginger and wait until it gets aromatic then add the eggplant and string beans
Add the turmeric, lemon juice and dry spices, salt and pepper to taste
Add chicken broth and quinoa and mix in with veggies
Add shrimp, lemon zest and mix well and cover with lid.
Plate into dishes and serve warm
Substitutions on this dish
You can use any vegetable that you wish on this dish that is in your pantry. I typically like using eggplant and string beans.
