No crust and keto friendly Ham and mushroom quiche
I’ve been craving having a quiche recently and wanted to try something without a crust and very keto friendly. This ham and mushroom quiche is time consuming but definitely worth it and you can have it for breakfast, lunch and dinner if you want.
This Ham and mushroom quiche uses spinach and cheddar cheese, but you can use any other ingredients for a substitution to the main ingredient. I typically do a quick stir fry with the ham, mushroom and spinach ahead of time and then add it to the wet ingredients to bake in the next stage.

Ingredients to this Ham and mushroom quiche
4 large eggs scrambled
1 cup of Almond milk or you can substitute with half and half or full cream
1 cup of shredded cheddar cheese or what you have available
1 cup of ham diced
1 cup of spinach, frozen is okay as a substitute
1/2 cup of mushrooms, use what you have available, i love the shitake for the meaty taste
1/4 tsp salt
1/2 tsp pepper
2 tbsp olive oil
1 tbsp garlic minced
How to make a no crust and keto friendly Ham and mushroom quiche
Heat your convection oven at 400 degrees and time for 30 minutes
In a medium skillet heat the olive oil and garlic
Add the ham, mushrooms and then the spinach until soft, add salt and pepper to taste
When spinach is wilted, place skillet away from the stove and let cool
In a large bowl place you almond milk, scrambled milk, and cheese and mix together well
Fold in the the ham and mushroom and mix well
Place all the ingredients into a large oven casserole dish and when the oven is ready and preheated, set into the oven.
After the oven sounds off, check to see if it is done and maybe place on broil for 3-5 minutes to get the top golden brown.
Take out the quiche and set in on the countertop to chill for a short time.
