Fast, yummy and easy to make apple coleslaw

One of my favorite side dishes that can be more substantial and eaten for every meal because of it’s nutritious ingredients, this apple cole slaw is yummy. I love to use delicious and sweet pink lady apples since they retain their crispness and have such full flavors and I add healthy blue berries and almonds to round out this slaw dish to eat on its own or as a nice side to a lunch or entree dish

This dish comes together very quickly, the most time spent here will be prep work to slick and dish the main ingredients to easy bite sized dishes.

One whole apple diced into small bite size pieces

One half cup of blue berries

One small cabbage and cup up into small thing slices

Two stalks of celery cut into small, diced pieces

1/4 cup of sliced almonds – you can substitute with any nut you have available

Two large tablespoons of Greek style yogurt

Two tablespoon of apple cider vinegar

Salt and pepper to taste

This dish comes together quickly and in under thirty minutes with most of the prep time slicing the ingredients and the recipe is as follows.

Place all the dry ingredients and fruit together into a bowl and add the the yogurt and then the apple cider vinegar and then mix well.

Add the salt and pepper to taste

We use crispy apples here but you can add any fruits that you have available for fruit toppings

Use any nuts you have available but almost for me hold up well in a dish like this

If you don’t have celery you can substitute with any crispy vegetables like bell peppers

I sometimes add a small dab of caesar dressing or lemon juice to give the dish a little more zest.
