2 large eggs scrambled

1/4 avocado sliced and diced

1/4 cup of firm tofu

2 tbsp mixed shredded cheese or use whatever you have available or if you follow vegan, use a vegan friendly cheese or just skip this ingredient

1 tsp tumeric

2 cloves garlic sliced thin

1/4 tsp salt

1/4 tsp pepper

2 tsp canola oil

Since this is a fast saute I use canola oil and add it to the skillet

I place the garlic slices and the tofu

Add the eggs, turmeric, avocado and cheese

Add salt and pepper and place dish into a section of the skillet so you can easily flip this into a plate afterwards
