It’s so soothing and tasty but yet keto and low carb friendly with ingredients that are probably already in your fridge and ready to make this tasty soup dish. We make substitutions to make the dish low carb and keto friendly and even use keto chips for that added crunchiness.

As a topping, I include avocado, sour cream, keto chips, mixed cheese, sliced avocado, lime and cilantro ( you can omit if you don’t like the taste), or more spice if you prefer this dish to be a little caliente (hotter)

Can you make it in the Crock Pot or Instant Pot?

Yes, if you have either, you can use it in place of cooking on the stove top. I typically use a pot to cook in so I can actually cook, taste and yes take pictures of the dish.

First cook the vegetables in the instant pot using a sauté setting and afterwards add all the other ingredients. Cook this on high pressure for 10 minutes. Release the pressure, shred chicken and serve with your desired toppings.

Using a crock pot but I would start by sauteing your vegetables first in olive oil before adding the test of the ingredients to the crock pot. Cook on high for 2 1/2 to 3 hours until the chicken is shred able. Bowl your soup and add your favorite toppings.

1 small yellow onion diced up into small pieces

6 cups of chicken broth

2 pieces bay leaf

1 tsp sea salt

1/2 tsp black pepper

1/4 tsp chili powder

1 tsp turmeric

2 tbsp ginger

1 can diced tomatoes

Heat up a pot on a stove top and add the olive oil
